Favorite Summer Recipe -- Banana Boats

While we were on vacation, one of our favorite ways to end the campfires was with Banana Boats. This technique is also known as "How to make a perfectly healthy banana into a delicious junk food treat". To make your own Banana Boats, you will need: bananas, marshmallows, chocolate, aluminum foil, and a campfire.

Begin by taking a knife and cutting one edge of the peel, as shown.

Peel back this one side of the banana peel.

Your banana boat should now look like this.

With a spoon, carefully scoop out a channel in the banana. Save this for mashed banana with peanut butter later -- delicious!

Chop up chocolate and marshmallows. If you have chocolate chips or mini marshmallows, you can skip this step.


This is Emily's favorite part -- alternate marshmallows and chocolate along the inside of the banana.

Fold the peel back over. Wrap in aluminum foil, and place on campfire until chocolate is melted and the marshmallows are gooey.

Hey, how'd I gain five pounds just by reading that??? :>) In an amazing coincidence, I have banannas and the makings for s'mores on hand, and am planning to grill tonight. I'm thinking we'll give this a try (and I'll try not to eat too many helpings). PB and banana ROCKS, by the way. I'm thinking I might throw that in with some yogurt for tomorrow's breakfast!

@ Bobbi -- I really have to trim my nails soon. They grow so long that if I don't cut them, typing starts to become rather difficult!

@ Lenetta -- That is so funny!! And it sounds like you had quite the scorcher there today. I'm so glad to see that you tried these and liked them so much. It's one of our families favorites, but we try not to make them too often!! The chicken marinade sounds interesting, so I'm heading over to your blog to check it out too!

@ Valerie -- That's a great point! Kids could easily make these with very little supervision and it keeps them busy for awhile.

@ Quadmama -- I was never in girl scouts. When I was a kid, I tried to sign up, but they were already full! Rejected by girl scouts!! *sigh* But this would make for a fun troop activity, and it's a good alternative to s'mores.

Oh my. That looks delicious! My children love bananas so this would be amazing. We usually use dark chocolate for a healthier unhealthy dessert. I wonder if it'll melt as easily. I'm so excited!
